This hearty Italian soup is a perfect comfort food thats both healthy and delicious.
In this video Ill show you how to make this classic soup from scratch using simple and fresh ingredients. This Minestrone soup is a perfect balance of flavors and textures with white kidney beans potatoes zucchini and kale in a rich tomato-based broth.
And lets not forget about the City Gloucester cheese and Parmesan cheese toppings which add a savory and nutty flavor to the soup. Ingredients: 1 oz extra virgin olive oil 1 12 tsp minced garlic 1 12 tsp dried bay leaves 1 12 tsp dried oregano 1 tsp celery seed 1 white onion chopped 4 Italian plum tomatoes finely diced 7 oz tomato paste 1 12 tsp black pepper 1 quart beef or vegetable stock 2 cups white kidney beans soaked and cooked 2 small potatoes cut up 1 cup City Gloucester 1 12 cups chopped kale 1 zucchini diced 34 cup green cabbage 1 tbsp parsley Salt to taste Parmesan cheese for topping Instructions: In a pot heat the extra virgin olive oil over medium heat.
Add minced garlic dried bay leaves dried oregano and celery seed.
Cook until fragrant. Add chopped white onion finely diced Italian plum tomatoes and tomato paste.
Stir to combine with the spices and cook until the onions are translucent. Add black pepper and beef or vegetable stock.
Bring to a boil. Add the soaked and cooked white kidney beans and the cut-up potatoes.
Stir to combine and let cook for about 13 minutes. Add City Gloucester cheese and let cook for another 13 minutes. Add chopped kale diced zucchini and green cabbage.
Cook for another 6 minutes. Season with salt and add parsley.
Serve with Parmesan cheese topping.
