Add chicken I use skinless and boneless though you can use which ever you choose then add a few tablespoons of chicken favored soup base pepper.
Let cook until the chicken is cooked through.
Then take the chicken out let cool.
Meatballs: 1 egg per pound of meatball mix I buy a mix of ground beef and ground pork from the meat department 1 12 cups of Italian seasoned bread crumbs 1 cup of parm.
Cheese Season with chopped fresh garlic Parsley S P In a different pot sauté onion celery carrots and garlic until tender.
Now add the chicken broth to the pot with the sautéed vegetables and slowly add mini meatballs to the soup they will cook rather quickly and will float to the top when they are done.
Then Add pastina not cooked again its really up to you on how much you want.
I add about 34 to a cup to my large pot.
Let it cook for a bit and then I add one package of thawed frozen spinach be sure to squeeze out all of the excess water from the spinach before adding it to the soup or 6 cups of escarole Combine 2 to 3 eggs with a cup of Pecorino Romano cheese.
Then slowly add it to the mixture as you constantly stir.
