Hi everyone! Heres a quick easy recipe for Colombian Aji which is a tangy and spicy sauce made with spicy Serrano peppers and fresh herbs like scallions and cilantro! Perfect for Colombian Empanadas fish and or any grilled meats! I cant wait for you to try this!

Ingredients:
12 Yellow Onion
1 Bunch Cilantro
1 bunch ScallionsGreen Onion
2 each peeled Plum Tomatoes
1 Serrano Pepper
14 C White Vinegar
2 Medium Limes
1 C water
Salt Pepper to taste
Instructions:
1.
Drop tomatoes in boiling water for 2 minutes until the skin starts to peel off.
Shock in cold water.
2.
Peel the tomatoes and squeeze the seeds and juice out save it for the empanada filling.
3.
Chop up the rest of the produce into a fine mince.
4.
Mix everything together.
Season with salt pepper.
