Scallop and Mushroom Risotto
Ingredients:
6 cups of water or chicken broth
3 tablespoons olive oil divided
mushrooms thinly sliced
Garlic minced
1 ½ cups Arborio rice
½ cup dry vinegar
salt black pepper to taste

3 tablespoons chopped parsely
2 tablespoons butter
⅓ cup parmesan cheese
Scallops
Add 2 tsp.

Add mushrooms to hot pan and stir occasionally until golden brown 3-5 minutes.
Add scallops and cook until scallops are lightly browned

Rice
warm the broth or water 6 cups
Add 1 tablespoon olive oil to skillet and stir in the Garlic .
Add rice stirring to coat with oil about 2 minutes.
When the rice has taken on a pale golden color pour in lemon juice vinegar
stirring constantly until the liquide is fully absorbed.
Add 12 cup broth or water to the rice and stir until the broth is absorbed.
Continue adding broth 12 cup at a time stirring continuously until the liquid is absorbed
about 15 to 20 minutes.
