The older style La Pavonis mechanical pressure stats used a spring-arm style screw adjustment.
newer pstats have a dial that you can adjust with your fingers

In order for this to work accurately its best if you have a pressure gauge atop your sight glass and that your pressure gauge needle rests at 0 when the machine is off.
If your pressure gauge needle is not at 0 youll need to fix that if you care about getting an accurate pressure reading.
I suppose you could always try to do this without an attached pressure gauge--by measuring water temp out of the group head--but I wouldnt envy anyone who dares try that.
