LEMON COOKIES RECIPE
makes 25 cookies
Ingredients:
3 cups ground oats or oat flour 300g
14 cup tapioca or cornstarch 30g
1 tsp baking powder
12 tsp baking soda
12 tsp salt
14 cup melted butter 60ml
12 cup maple syrup honey or agave 120ml
2 eggs
1.5 cups ricotta cheese 400g
14 cup lemon juice 60ml
1 tbsp lemon zest
NUTRITIONAL INFO per cookie:
109 calories fat 4.2g carb 13.9g protein 3.7g total sugars 3.9g
Preparation:
In a bowl mix the dry ingredients oat flour cornstarch baking powder baking soda and salt.
In another bowl mix the wet ingredients melted butter sweetener ricotta cheese lemon juice and lemon zest.
Pour the dry mixture into the wet ingredients and mix just until combined.
Let the dough rest for 10 minutes.
Scoop the sticky dough onto a lined baking tray.
Bake at 350F 180C for 12-14 minutes.
Let it cool in the baking tray for 10 minutes then transfer to a cooling rack and let it set for at least 1 hour.
Drizzle with Greek yogurt glaze just combine 3 tbsp Greek yogurt 12 tbsp lemon juice and 1 tsp honey.
Enjoy for breakfast or snack!
