These double chocolate cheesecake muffins are absolutely fantastic! Theyre super chocolatey and soft baked with a dollop of creamy cheesecake filling!
This is how to make Double Chocolate Cheesecake Muffins:
Double Chocolate Cheesecake Muffins
Yield: 15 Muffins
Ingredients:
40 g Butter 1.5 oz
80 g Semi-Sweet Chocolate 3.0 oz
200 g All-Purpose Flour 1 14 cups
150 g Sugar 12 cup
1 Tbsp Baking powder
2 Tbsp 15 g unsweetened Cocoa Powder
14 tsp Salt
200 ml Milk 34 cup 2 Tbsp
1 tsp Vanilla Extract
2 Eggs
100 g of Milk Chocolate Chips 12 cup
Cheesecake Filling:
250g Cream Cheese 8.80 oz
2 Tbsp Sugar
1 Egg
1 tsp Corn Starch
2 tsp Vanilla Sugar
Directions:
1.
Preheat oven to 180C356F.
Line a 12-count muffin pan with cupcake liners.
2.
In a small saucepan melt chocolate and butter.
Set aside.
3.
In a large mixing bowl add flour sugar baking powder cocoa powder and salt.
Give everything a quick mix.
4.
Add milk vanilla extract and eggs.
Beat on medium high speed just until everything is well combined.
5.
Add melted chocolate mixture.
6.
Stir in chocolate chips.
7.
Make Cheesecake mixture.
In a medium mixing bowl add in cream cheese sugar egg corn starch and vanilla sugar.
Beat on medium high speed just until everything comes together.
8.
Scoop the Chocolate mixture into the prepared cupcake liners.
9.
Add about 1 Tbsp of cheesecake filling into the center.
10.
Bake for about 19 - 21 minutes or until a toothpick inserted in the center comes out clean.
11.
Let cool completely and enjoy!
